recap of a lovely day + a pumpkin muffin recipe.

As I mention in yesterday’s post, I’m currently obsessed with all things pumpkin. No, seriously. Pumpkin spice lattes, pumpkin bread, pumpkin scented candles… you name it, I gotta have it. Late Saturday night I let my cravings get the best of me and I baked pumpkin muffins which made for a perfect breakfast (paired with some coffee, of course) to enjoy on this lovely Sunday morning! (Find the delicious muffin recipe on Smitten Kitchen).

Since it was such a beautiful fall morning,  I couldn’t resist a long bike ride. I love taking the time to reflect, and what better way than through nature and the changing seasons! Check out a few of the images I captured:

chunky avocado salsa.

I’d been meaning to make pico de gallo and guacamole all summer, but for some reason never did… until today that is! Now that summer is near its end, I finally got around to making this fresh (and easy!) guac and pico de gallo combo. This particular recipe was adapted from Two-Tarts, but with a few added changes on my end – all of which are already included in the ingredients list below.

Ingredients:

  • 1 large avocado, chopped into chunks
  • 2-3 medium tomatoes, chopped
  • 1/4 cup red onion, chopped
  • 2 Tbs cilantro, chopped
  • juice of 1/2 lime
  • garlic salt and cumin, to taste

* Optional add-ins: black beans, corn, diced pepper

Directions:

Combine all ingredients in a bowl and serve with tortilla chips (my personal favorite are Archer Farms’ organic blue corn flaxseed!). It’s that easy!

healthy mocha protein shake.

I recently concocted a delicious breakfast shake that I have found myself drinking on a regular basis, so today I’m sharing it with all of you!

Here’s what you’ll need (plus a few ice cubes):

Here’s what to do:

In a blender, combine almond milk, cold pressed coffee (I like Dunn Bros), 1 frozen banana, 1 scoop of chocolate protein powder, and a handful of ice cubes. Mix it up and voila! – a delicious and healthy (and let’s not forget caffeinated) breakfast shake! A perfect way to start the day off right :)
