As I mention in yesterday’s post, I’m currently obsessed with all things pumpkin. No, seriously. Pumpkin spice lattes, pumpkin bread, pumpkin scented candles… you name it, I gotta have it. Late Saturday night I let my cravings get the best of me and I baked pumpkin muffins which made for a perfect breakfast (paired with some coffee, of course) to enjoy on this lovely Sunday morning! Since it was such a beautiful fall morning, I couldn’t resist a long bike ride. I love taking the time to reflect, and what better way than through nature and the changing seasons! Check out a few of the images I captured:

I’d been meaning to make pico de gallo and guacamole all summer, but for some reason never did… until today that is! Now that summer is near its end, I finally got around to making this fresh (and easy!) guac and pico de gallo combo. This particular recipe was adapted from Two-Tarts, but with a few added changes on my end – all of which are already included in the ingredients list below.
- 1 large avocado, chopped into chunks
- 2-3 medium tomatoes, chopped
- 1/4 cup red onion, chopped
- 2 Tbs cilantro, chopped
- juice of 1/2 lime
- garlic salt and cumin, to taste
* Optional add-ins: black beans, corn, diced pepper
Combine all ingredients in a bowl and serve with tortilla chips (my personal favorite are Archer Farms’ organic blue corn flaxseed!). It’s that easy!

I recently concocted a delicious breakfast shake that I have found myself drinking on a regular basis, so today I’m sharing it with all of you!
Here’s what you’ll need (plus a few ice cubes):
Here’s what to do:
In a blender, combine almond milk, cold pressed coffee (I like Dunn Bros), 1 frozen banana, 1 scoop of chocolate protein powder, and a handful of ice cubes. Mix it up and voila! – a delicious and healthy (and let’s not forget caffeinated) breakfast shake! A perfect way to start the day off right :)
